Background
I love guacamole so I like to experiment with different recipes. This Spicy avocado and roasted pepper cream is one of my favourites. It’s ready in just 5 minutes – you can use jarred roasted red pepper or your own barbecued or grilled leftovers. I used spicy chipotle paste, which is more powerful than the normal one! If you want it super hot, you can add some fresh chilli to it too - if you want a mild version, just use the normal chipotle paste sold in most shops.
Ingredients
- 1 big or 2 small ripe avocado
- 1 roasted pepper
- 1 garlic, minced
- ½ red onion, roughly chopped
- Juice of 1 lime
- 1 tsp spicy chipotle paste
- 1 handful coriander leaves
- Salt &pepper
Instructions
- Drain the roasted pepper and put it into a small food processor.
- Cut the avocado in half, remove the stone and scoop the flesh out into the food processor. Add the garlic and onion.
- Whizz for a few seconds. Add the lime juice and chipotle paste. Process for a few seconds. Add the coriander and whizz again, until you get a smooth, thick cream.
- Taste, season to your liking, and add more chipotle or lime if needed.
- Serve immediately.
