Spicy Mackerel pasta
Background
One of my staples in the larder is tinned fish ( Sardines, Mackerel, tuna etc). I particularly like mackerel or sardines in spicy tomato sauce which can save those days when I have to create something within 10 minutes or just can’t be bothered to cook. This spicy Mackerel pasta is one of those dishes that can be ready in ten minutes. Also, it can be gluten and dairy-free too - and you can use up some veggies in your fridge/freezer for it. I used red bell pepper and spinach – but peas, broad beans, French beans or kale would work too.
Ingredients
- 200g pasta
- 1 red onion
- ½ red bell pepper
- 2 large handfuls of spinach
- Juice of ½ lemon
- 1 tin of mackerel in spicy tomato sauce (125g)
Instructions
- Cook the pasta according to the packet instructions, then drain and keep warm under a lid.
- Meanwhile finely slice the onion and pepper. Heat a spoonful of oil in a frying pan then gently fry the onion the pepper until tender. Add the spinach and lemon juice. Put a lid on and cook for 2 minutes or until the spinach has wilted.
- Add the fish with its sauce and warm through.
- Mix with the pasta with the fish sauce then serve with some grated cheese on top if you like.
