Spinach and yoghurt dip

Background
This a wonderful dip as part of a Mezze or an appetizer at an informal dinner party. You can also serve it with kebab or falafel in pita bread or flatbread.
Ingredients
- 1 onion (chopped)
- 2 cloves of garlic (finely chopped)
- 2 Tbsp olive oil
- 300g baby spinach
- 200 ml Greek yogurt
- Salt & pepper
Instructions
- Heat the oil in a small frying pan. Add and the onion and garlic and fry until brown. Be careful not to burn them!
- Rinse the spinach with cold water, then put into boiling water for 2-3 minutes .
- Rinse with cold water through a sieve, then squeeze out the remaining water with a spoon. Form a ball, then chop finely.
- Pour the yoghurt into a serving bowl, add the spinach and the onion &garlic mixture. Season, mix well.
- Serve with toasted pita, crackers, bread-sticks or raw vegetable pieces.
