Asparagus in Miso Glaze
Background
This asparagus in miso glaze is a quick, flavourful appetizer that works as a light nibble or as part of a larger dinner menu. The tender asparagus is coated in a savoury-sweet glaze made with miso, soy, and a hint of honey, giving every bite a satisfying umami richness. It’s simple, fast and versatile: serve it as a starter, or with rice for a light meal, or enjoy it on the side of salmon, chicken or beef. Whether steamed or grilled, the asparagus absorbs the glaze perfectly, making this dish an easy favourite for weeknights or entertaining.
Ingredients
- 1 garlic clove, minced (optional)
- 1 tsp sesame oil
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- Dash of lemon juice
- 1 tsp miso paste
- 1 tsp honey
- Sesame seeds, for serving
Instructions
- Trim the tough ends from the asparagus.
- Steam the asparagus over boiling water, or grill them in a lightly oiled griddle pan until just tender.
- In a small bowl, whisk together the soy sauce, miso paste, rice vinegar, honey, sesame oil and lemon juice.
- Add the minced garlic if using, and mix well.
- Once the asparagus is cooked but still bright and crisp-tender, transfer it to a plate and brush immediately with the miso glaze.
- Sprinkle with sesame seeds and serve warm.
