Spinach in yogurt sauce

Background
Spinach in yogurt sauce is a dish native to north of India. It is very tasty and healthy too. It is called palak khadi (palak means spinach and khadi means yogurt gravy). It goes well with steamed rice or roti.
Ingredients
- 125g Spinach, washed and chopped
- 2 Tbsp Gram flour
- 1 cup Plain yogurt
- 2 cups Water
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1 tsp Turmeric
- A pinch of asafoetida
- 1 Dry red chilli
- 1 tsp Red chilli powder
- Salt as required
- ½ Tbsp Oil
Instructions
- Mix together gram flour, yogurt and water taking care there are no lumps. Set it aside.
- Heat oil in a deep bottomed vessel and add mustard seeds, asafoetida and cumin seeds and let them splutter.
- Add chopped spinach and fry until cooked.
- Add turmeric and mix.
- Add the yogurt mixture and keep stirring until it boils on high flame. If the mixture is not stirred continuously it might get spoiled.
- Add the red chilli powder and keep stirring.
- The salt should be added in the end and mixed.
- Serve hot with steamed rice.
