Background
This spring onion guacamole is based on the classic recipes - instead of onion we use spring onion that taste a bit more mild and fresh. Adjust the heat to your liking, using hot chilli or Tabasco. Serve it with tortilla chops and crudites.
Ingredients
- 2 ripe avocados
- 1 small chilli
- 4 spring onions
- Juice of 1 lime
- 1 handful fresh coriander or parsley
- Salt & pepper
- Optional:Β a few drops of Tabasco
- 1 spring onion to garnish
Instructions
- Cut the avocados in half, remove the stone and scrape out the flesh into a small food processor.
- Roughly chop the tomato and the spring onion. De-seed the chilli. Put these into a small food processor together with the coriander, lime juice and avocado flesh.
- Whizz until you get a textured or smooth cream, according to your liking.
- Taste it. Season with salt and pepper and add more lime juice and Tabasco if needed.
- Serve immediately, garnished with chopped spring onion.
