Steak, stilton and pomegranate salad

Background
This quick and easy steak salad is perfect for special occasions or a weekend lunch. Serve with crusty bread and a nice glass of vino.
Ingredients
- 2 thick sirloin steaks (preferably matured)
- 1 Tbsp olive oil
- 1 pack of green salad
- 1 small handful of parsley leaves
- 1 pomegranate
- 50g Stilton cheese
- Dressing:
- 2 Tbsp red wine vinegar
- 4 Tbsp olive oil
- 1 tsp Dijon mustard
Instructions
- Rub the steak with oil and salt. Heat a griddle pan and fry the steaks on both sides to your liking (for about 3-5 minutes).
- Transfer the steaks onto a plate, cover and rest for a minimum of 5 minutes.
- While the meat is resting , cut the pomegranate in half and scrape the seeds out.
- Whisk together the oil, mustard, vinegar and a pinch of salt. Add half of the pomegranate seeds.
- Scatter the salad leaves and with parsley onto two large plates, drizzle with most of the dressing.
- Slice the steak into 1cm thick strips and place these on top of the salad.
- Season with ground pepper then scatter the remaining pomegranate seeds and Stilton on top. Drizzle with the remaining dressing.
Tips
For really juicy steaks make sure the pan is piping hot then "seal" the steaks for 30 seconds on each side then turn once a minute.© 2026 Copyright CookTogether
