Steamed rice noodles (Nool puttu)

Background
Steamed rice noodles or nool puttu are very healthy as they are steamed and do not have any oil in them. They go very well with any Indian curry on the side. This dish is native to the state of Kerala.
Ingredients
- 2 cups Rice flour
- ½ cup Boiled water (Or as required)
- Salt as required
- 2 Tbsp Grated fresh coconut
Instructions
- Mix the rice flour and salt together in a mixing bowl.
- Knead the rice flour adding the boiled water little by little with a spoon until it forms a smooth dough.
- Fill this dough into a press and roll the noodles into a tray (to steam) until it forms size of a burger bun.
- Continue rolling out the noodles until all the dough is exhausted. This recipe would make 12 burger bun sized noodles.
- Steam all the noodles until soft for 10 minutes.
- Remove and garnish with grated fresh coconut and serve in a plate with an Indian curry.
Tips
- Care should be taken so as not to make the rice flour dough either very soft or very hard.
- It is a must to have a "Muruku press" to make this, which is easily available in any Indian store.
- The flour should be pressed and steamed immediately, otherwise, the noodles come out hard.
