Stir-fried mangetout and edamame beans

Background
This stir-fried mangetout and edamame beans is a super easy dish to make - it would be ideal as part of a Japanese or even South-East Asian menu. Also, you can serve it as part of a vegan meal with rice.
Ingredients
- 1 clove of garlic
- 2 cm piece ginger
- 1 chilli
- 100g mangetout
- 100g edamame
- 1 Tbsp soya sauce
- 1 Tbsp rice wine
- Juice of Β½ lime
- Β½ tsp sesame oil
- Sesame seeds
- 2 Tbsp chopped coriander
Instructions
- Finely chop the garlic, ginger and chilli.
- Heat the oil in a wok, then stir-fry them for 30 seconds or so.
- Add the mangetout and beans, then stir-fry for a minute. Add the soya sauce, rice wine and lime juice. Turn down the heat and cook for about 3 minutes until tender.
- Stir in the sesame oil, coriander leaves and sesame seeds, then serve immediately.
