Stir-fried Shiitake mushrooms and green beans

Background
Shiitake mushrooms are healthy, tasty and ideal for many Asian-style dishes. If you need a quick and easy side or vegan dish, do try these stir-fried Shiitake mushrooms and green beans. Ready within just 10 minutes. They also fit perfectly in a menu celebrating Chinese New Year!
Ingredients
- 1 Tbsp groundnut oil
- 1 onion, peeled
- 1 clove of garlic, peeled
- 2 cm ginger, peeled
- 150g Shiitake mushrooms
- 2 Tbsp soy sauce
- 2 Tbsp Shaoxing rice wine (or dry sherry)
- 200g green beans
- 1 tsp toasted sesame oil
- 1 tsp toasted sesame seeds
Instructions
- Finely slice the onion, ginger and garlic. Cut the mushrooms into chunks and the beans into 3-4 cm pieces.
- Heat the oil in a wok over medium-high heat. When it’s smoking hot, add the onion and stir-fry for 3 minutes until brown then add the garlic and cook for 30 seconds.
- Add the mushroom, stir fry for a minute then add the rice wine and soy sauce. Add the beans, turn down the heat and put a lid on.
- Saute for 3 minutes, until the beans are tender.
- Stir in the sesame oil.
- Serve with some sesame seeds sprinkled on top.
