Teriyaki pork loin with shiitake

Background
This teriyaki pork loin with shiitake is super quick and easy dish to make. You could serve it withΒ a crispy salad for a low-carb meal, or with mashed potatoes/rice/sweet potatoes etc.
Ingredients
- 6 pork tenderloin medallions
- 2 Tbsp Teriyaki sauce
- 1 Tbsp vegetable oil
- 1 Tbsp Kikkoman soy sauce
- 1 tsp toasted sesame oil
- 1 tsp rice vinegar
- 100g shiitake
Instructions
- Put the pork in a shallow dish and pour over the Teriyaki sauce. Marinate for an hour or so.
- Heat the oil in a frying pan then add the pork and sear on both sides, then pour over the marinade and cook for a couple of minutes.
- Add the soy sauce, sesame oil and rice vinegar. Arrange the shiitake around the pork, then put a lid on and gently cook for 8-10 minutes over low heat.
- When the pork and mushrooms are tender, turn off the heat and serve immediately.
