Tofu rice with green peas

Background
This tofu rice with green peas is made with leftover cooked rice so it’s ready within 10 minutes. Perfect on busy or lazy days or when you want to use up leftovers in your fridge. It’s vegan, gluten-free, healthy and hearty too. You can serve it as aside dish too.
Ingredients
- 2 cups cooked basmati rice
- 100g hard tofu
- 1 Tbsp vegetable oil
- 1 bunch spring onions
- 2 garlic cloves
- 1 Tbsp soy sauce
- 1 cup green peas
- 1 tsp sesame seeds
- Few drops of sesame oil
- 2 Tbsp chopped coriander leaves
Instructions
- Cut the tofu into small cubes. Chop the spring onion and garlic.
- Heat the oil in a large saucepan and fry the tofu until golden all over.
- Add the garlic and spring onion and stir-fry for a minutes or so.
- Add the peas soy sauce and about half a cup of water.
- Bring to the boil, cover and cook for 5 minutes.
- Add the rice & sesame seeds, then stir to warm through.
- Finally stir in the sesame oil and the chopped coriander leaves.
- Serve warm.
