Background
I love anything that has tangy zest to it. Tomato rice is one of my favourite rice recipes which is super-easy to make and is ideal for lunch boxes.
Ingredients
- 4 Ripe tomatoes (Finely chopped)
- 1 cup Cooked basmati rice
- 1 Onion (Finely chopped)
- 1" Ginger (Finely chopped)
- Β½ Tbsp Oil
- Salt as required
- 1 tsp Turmeric powder
- For seasoning:
- 1 tsp Musard seeds
- 1 tsp Split black gram (Urad dal split)
- 1 tsp Bengal gram split and skinned (Chana dal)
- 2 Red Chillies
- A pinch asafoetida
- A sprig of curry leaves
- Coriander leaves for garnishing
Instructions
- Heat oil in a pan and add all the ingredients for seasoning and let them splutter.
- Add the chopped onion and fry until transparent.
- Add the ginger and turmeric to it.
- Add the chopped tomatoes, fry until they are soft.
- Add salt as required.
- Mix the cooked rice in this tomato mixture and garnish with coriander leaves.
