Ingredients: 4 Ripe tomatoes (Finely chopped); 1 cup Cooked basmati rice; 1 Onion (Finely chopped); 1" Ginger (Finely chopped); ½ Tbsp Oil; Salt as required; 1 tsp Turmeric powder; For seasoning:; 1 tsp Musard seeds; 1 tsp Split black gram (Urad dal split); 1 tsp Bengal gram split and skinned (Chana dal); 2 Red Chillies; A pinch asafoetida; A sprig of curry leaves; Coriander leaves for garnishing

Background

I love anything that has tangy zest to it. Tomato rice is one of my favourite rice recipes which is super-easy to make and is ideal for lunch boxes.

Ingredients

4 Ripe tomatoes (Finely chopped)
1 cup Cooked basmati rice
1 Onion (Finely chopped)
1" Ginger (Finely chopped)
½ Tbsp Oil
Salt as required
1 tsp Turmeric powder
For seasoning:
1 tsp Musard seeds
1 tsp Split black gram (Urad dal split)
1 tsp Bengal gram split and skinned (Chana dal)
2 Red Chillies
A pinch asafoetida
A sprig of curry leaves
Coriander leaves for garnishing

Instructions

Heat oil in a pan and add all the ingredients for seasoning and let them splutter.
Add the chopped onion and fry until transparent.
Add the ginger and turmeric to it.
Add the chopped tomatoes, fry until they are soft.
Add salt as required.
Mix the cooked rice in this tomato mixture and garnish with coriander leaves.
