Background
This tzatziki is made with roasted cucumber, which sounds a bit weird, but is actually very tasty and different to the normal, well-known sauce. So if you're having a party, why don't you give it a try? It's very easy to make! You can serve it as a dip with pita or as a sauce in a kebab, or drizzled over grilled fish & meat, koftas, falafels and so on!
Ingredients
- 1 cucumber
- 1 Tbsp olive oil
- 100g Greek yogurt
- 1 tsp capers (in brine )
- 1 small clove garlic, minced
- 1 Tbsp chopped dill
- 1 Tbsp chopped mint leaves
- Juice of half a lemon
- Salt and pepper

- Cut the flesh into half centimetre slices. Put them on a baking sheet in a single layer. Pour over the oil, season with a little salt, then roast for 15 minutes until light brown. Transfer them to a serving dish.
