Vegan apple and blackberry oat cookies

Background
These vegan apple and blackberry oat cookies are super easy to make, they have no extra sugar and gluten-free oats can be used too. So overall they are quite healthy, particularly if made with homemade low-sugar blackberry jam.
Ingredients
- 2 ripe bananas
- 1 green apple, grated
- 1 cup oats (gluten-free, if needed)
- 1 tsp ground cinnamon
- 1 tsp vanilla paste
- 3 Tbsp blackberry jam
- 1 Tbsp oil
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, cinnamon, vanilla and grated apple, then mix well.
- Let the mixture rest for a few minutes.
- Preheat oven to 180°C and line a baking tray with parchment paper.
- Add the jam to the mixture and combine gently. If it’s too thick, add some apple juice or plant-based milk.
- Make equal sized patties from the mixture, then press them between your palms. Place them on the baking tray.
- Bake in the oven for approx. 15 minutes until golden.
- Let them cool on a wire-rack.
