Vegan hazelnut cookies

Background
These Vegan hazelnut cookies are egg-free, dairy-free and gluten-free too! Also, they are easy to make and really yummy - the perfect snack during the day. As they have no dairy products in them, these cookies can last for many days in an airtight container.
Ingredients
- 125g margarine/dairy-free spread
- 50g soft brown sugar
- 50g brown rice flour
- 50g gram flour
- 30g ground almonds
- 50g finely chopped hazelnuts
Instructions
- Preheat the oven to 180°C.
- Cream the sugar with the margarine until light and fluffy. Slowly add rice flour, then the gram flour, ground almonds and chopped hazelnuts. Knead it gently into a dough.
- Line a baking sheet with baking paper. Add dollops of the dough, pressing them down into circular shapes with a fork, which should create a lined pattern on the surface.
- Bake the cookies for 12 to 15 minutes and let them cool for 5 minutes in the tray, then transfer them to a wire rack.
