Vegetable curry with coconut (Vegetable Kurma)

Background
This dish has all the ingredients for a tasty and healthy curry which goes well with rice, roti, dosa, etc. This dish is widely prepared in the south of India. It is a rich dish which is aΒ frequent in many parties for the vegetarian lovers. It can be made for a party.
Ingredients
- 1 cup Mixed vegetables (boiled)
- 2 Boiled Potatoes (medium)
- 2 Green chillies (Slit)
- Whole garam masala (Cinammon (1"), Cloves (2), Cardamom (2), Bay leaf (1) )
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- 1 tsp Sugar
- 2 tsp Ginger garlic paste
- 1 Tbsp Oil
- 1 tsp Turmeric
- 1 sprig Coriander leaves
- Salt as required
- 2 Tbsp Coconut grated
- 1 Tbsp Poppy seeds (Fry them until they pop but not burnt)
- Water as required
- 2 Onions (chopped)
Instructions
- Heat oil in a pan and add the whole garam masala.
- Add the onions and fry them until brown.
- Add the green chillies, turmeric and ginger garlic paste and fry them until the rawness is gone.
- Add the coriander and cumin powder and fry only for a minute.
- Grind together the coconut and poppy seeds with little water and make a paste.
- Add the vegetables, potatoes, ground paste, sugar and salt. Boil this whole mixture until the raw smell of the paste is gone.
- Garnish with coriander leaves and serve hot.
