
Background
This warm runner bean salad is quick and easy to make, perfect as a side dish with roast and fried meat, or you can use it as a sandwich filler with salami, ham, smoked salmon, cheese and so on. The salad is vegan, so you could serve it within a plant-based meal, or add feta or goatβs cheese for a vegetarian version.
Ingredients
- 150g sliced runner beans
- 4 salad onions
- For the dressing:
- 1 small garlic clove, minced
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp Dijon mustard
- Salt & pepper
Instructions
- Steam or blanch the runner beans for 3-5 minutes, until tender, then drain.
- Meanwhile, mix the dressing in a small bowl and thinly slice the salad onions.
- Put the beans in a bowl and pour over the dressing, then mix in the salad onion pieces and serve lukewarm.
