Background

This warm runner bean salad is quick and easy to make, perfect as a side dish with roast and fried meat, or you can use it as a sandwich filler with salami, ham, smoked salmon, cheese and so on. The salad is vegan, so you could serve it within a plant-based meal, or add feta or goat’s cheese for a vegetarian version.

Ingredients

150g sliced runner beans
4 salad onions
For the dressing:
1 small garlic clove, minced
1 Tbsp olive oil
1 Tbsp lemon juice
1 tsp Dijon mustard
Salt & pepper

Instructions

Steam or blanch the runner beans for 3-5 minutes, until tender, then drain.
Meanwhile, mix the dressing in a small bowl and thinly slice the salad onions.
Put the beans in a bowl and pour over the dressing, then mix in the salad onion pieces and serve lukewarm.
