Yam in tamarind gravy

Background
Cooking yam in tamarind gravy creates a tangy and spicy dish with a tinge of sweetness. This is a common and very popular dish in south India.
Ingredients
- Β½ kg tender yam
- 2 big onions finely chopped
- 2 green chillies slit and cut
- 1 tsp red chilli powder
- ΒΌ tsp turmeric powder
- 2 Tbsp oil
- Salt to taste
- Jaggery as needed
- 2 cups tamarind juice
- 1 tsp coriander powder
- Β½ tsp cumin powder
- 1 bunch coriander leaves chopped
- For seasoning:
- Β½ tsp mustard seeds
- Β½ tsp fenugreek seeds
- 1 pinch asafoetida
- 1 spring curry leaves
Instructions
- Peel the yam and cut into cubes. Pressure cook on high flame for about three whistles.
- In deep bottomed pan, add oil and mustard seeds.
- When the seeds start to splutter, add fenugreek seeds, asafetida and curry leaves.
- Add the cooked yam, to the oil. Then add salt, tamarind juice, jaggery, red chilli powder, turmeric powder, coriander powder, cumin powder. Mix well.
- Close the pan with a lid and cook on a medium flame for 10 minutes till the gravy becomes thick.
- Remove from the flame and garnish with coriander leaves. Serve hot with steamed rice.
