Background
This a people-pleaser at BBQ events - both adults and kids just love it! It's very easy to prepare, which can be done the night before or a couple of hours before cooking. The drumsticks are delicious cold too, so any leftovers are perfect for a picnic.
Ingredients
- 1kg chicken drumsticks
- 2 Tbsp lemon zest
- ⅓ cup fresh lemon juice
- 2 Tbsp olive oil
- 2 cloves pressed garlic
- 2 Tbsp (lemon) thyme
- 1 Tbsp marjoram (or oregano)
- 1 tsp salt
- 1 tsp ground pepper
- Lemon slices to serve
Instructions
- Put the chicken legs into a medium-sized plastic bag (e.g. freezer bag).
- Chop the herbs and mix with the other ingredients. Pour this dressing over the drumsticks. Tie the bag and massage the chicken legs thoroughly inside it.
- If you have time, marinate in refrigerator for about 2 hours or even overnight.
- Barbecue or grill the drumsticks until they're cooked through properly.
- At the same time cut slices of lemon and barbecue or grill these until slightly caramelized.
- Serve with the barbecued lemon slices and some salad or grilled veggies.
