Zesty and herby grilled sea bass

Background
This zesty and herby grilled sea bass is charcoaled on a bed of lemon slices which make it taste really citrusy! If you like crispy skin, remove the lemon slices for the last couple of minutes. Serve it with a herby salad.
Ingredients
- 2 lemons
- 1 Tbsp olive oil
- 1 medium whole sea bass, cleaned &gutted
- 2 bay leaves
- 2 rosemary sprig
- 2 sprigs of thyme
Instructions
- zest and juice 1 lemon. Mix this with olive oil, and salt and pepper.
- Make a couple of slashes on each side of the fish. Brush the fish with the zesty olive oil then tuck some herbs into the slashes. Put the bay leaf into the cavity. together with the rest of the herbs.
- Slice both lemons.
- Turn on the BBQ. When the coals are ashen put the lemon slices on the BBQ grid and place the fish on top of them. Cook the fish for about 8-10 minutes on each side.
- Serve with lemon wedges.
Tips
If you want the skin to be crispy , remove the lemon slice for the last couple of minutes of cooking.© 2025 Copyright CookTogether
