Dairy Free Cherry Clafoutis

I love cherries in the summer and wanted to make an easy cake withΒ them for the weekend. My mummy suggested to make cherry clafoutis, a famous and easy French pudding. The batter is similar to a pancake mixture which is poured over the cherries then baked in the oven. I’m allergic to dairy, so I’ve used almond milk and dairy-free sunflower spread to grease the pan.

This is a very simple recipe, do try it, because it’s also very yummy!

You’ll need:

  • Dairy free spread, for greasing
  • 1 Tbsp unrefined sugar to sprinkle
  • 300g cherries
  • 50g self-raising flour
  • 3 eggs
  • 50g unrefined sugar
  • 250 ml Β almond milk
  • Β½ teaspoon vanilla extract

How to make it:

  1. Preheat the oven to 180ΒΊC.
  2. Mix the eggs, flour, milk, vanilla and sugar in a food processor until smooth. If you have time, rest the batter for 15-20 minutes.
  3. Grease a medium sized baking dish with the spread.
  4. Stone the cherries and dot them around the dish. Sprinkle them with the 1 Tbsp sugar.
  5. Pour the batter over the cherries until they are just covered.
  6. Bake for about 30-35 minutes until golden.
  7. Let it cool before serving and dust with icing sugar.

Tips

  • You can use gluten-free flour or ground almonds instead of wheat flour if you like!
