Background

These zingy gluten-free almond and lemon waffles are perfect for spring-summer weekend breakfasts. I made them more healthy by using Stevia instead of sugar. If gluten is not an issue for you, just use normal flour! Serve them with any topping you like!

Ingredients

1 cup ground almonds
1 cup gluten-free flour
2 tsp baking powder
2 Tbsp Stevia or 3 Tbsp sugar
2 large eggs
Zest and juice of one large lemon
1½ cup of Almond milk
1 tsp vanilla
2 Tbsp vegetable oil

Instructions

Mix the dried ingredients in a bowl, then add the eggs, lemon juice & zest and the almond milk. Mix until you get a thick but pourable batter. Stir in the oil and rest for 10 minutes.
Meanwhile, grease and heat your waffle maker. Following the manufacturer’s instructions make your waffles - they should be golden and crispy.
Serve the waffles immediately with maple syrup and lightly toasted almonds, or toppings of your choice.
