Almond and lemon waffles

Background
These zingy gluten-free almond and lemon waffles are perfect for spring-summer weekend breakfasts. I made them more healthy by using Stevia instead of sugar. If gluten is not an issue for you, just use normal flour! Serve them with any topping you like!
Ingredients
- 1 cup ground almonds
- 1 cup gluten-free flour
- 2 tsp baking powder
- 2 Tbsp Stevia or 3 Tbsp sugar
- 2 large eggs
- Zest and juice of one large lemon
- 1½ cup of Almond milk
- 1 tsp vanilla
- 2 Tbsp vegetable oil
Instructions
- Mix the dried ingredients in a bowl, then add the eggs, lemon juice & zest and the almond milk. Mix until you get a thick but pourable batter. Stir in the oil and rest for 10 minutes.
- Meanwhile, grease and heat your waffle maker. Following the manufacturer’s instructions make your waffles - they should be golden and crispy.
- Serve the waffles immediately with maple syrup and lightly toasted almonds, or toppings of your choice.
