Apple pie mummies
Background
These apple pie mummies are perfect for a Halloween party or dinner. They can be made ahead or freshly and served with a warm caramel sauce, melted chocolate, fruit compote or custard. It can be vegan and gluten-free too.
Ingredients
- 6 Granny Smith apples
- 1 Tbsp. warm water
- 2 tsp cornflour
- 2 Tbsp butter or margarine
- ½ lemon juiced
- 1 tsp cinnamon
- 2 Tbsp muscovado sugar
- 1 sheet ready-rolled puff pastry (dairy or gluten-free if needed)
- 1 Tbsp milk or plant-based milk
- Raisons, cranberries, small marshmallows etc
Instructions
- Peel and dice 2 apples.
- Cut off the tops of the remaining apples, then scoop out the flesh, using a melon baller, leaving about 5mm rim.
- In a small bowl, mix the water and cornflour into a paste.
- Melt the butter in a small saucepan over medium heat, then add the diced apples, lemon juice, cinnamon and sugar. Cook for about 5 minutes until the apples are tender (not mushy). Add the paste and cook for another minutes or so. Let it cool.
- Preheat oven to 190°C.
- Put the hollowed out apples onto a baking tray, lined with parchment paper. Fill them with the apple sauce mixture.
- Roll out the puff pastry, the using a pizza cutter, cut out long strips. Wrap the filled apples with these looking like a mummy- not too tightly though.
- Brush the pastry crust with the milk, then bake for about 20-25 minutes or until the apples are tender and the crust is light brown.
- Stick the eyes into the gaps (using dried cranberries, sultanas, marshmallows, sweets etc.)
- Serve with a sauce of your choice.
