Bagel with avocado and Air Fryer vegetables

Background
If you have an Air Fryer you can make quick and easy meals for breakfast and brunch too. This bagel with avocado and Air Fryer vegetables is ready with 10 minutes! Serve it with a crispy salad. This dish is vegan and made with gluten-free bagel, but you can use normal bagels too.
Ingredients
- 1 bagel
- ½ avocado
- ½ red pepper
- ½ red onion
- 1 small courgette
- 1 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 garlic clove, minced
- Salt and pepper
- ½ tsp oregano
Instructions
- Cut the pepper into chunks, the onion into veggies and courgette into long slices.
- Mix the oil, garlic, oregano and vinegar. Season with salt & pepper.
- Brush the veggies with this mixture then put them in the Air Fryer.
- Set the machine to "roasting"and cook over 200°C for about 10 minutes, until the veggies are tender and lightly charred. You might want to turn them over once.
- Cut the bagel in half (horizontally) then lightly toast both halves.
- Meanwhile, peel the avocado. Cut the avocado flesh into long strips.
- When the bagel is done, put the avocado slices onto the lower half, then brush them with the remaining dressing or some balsamic vinegar.
- Add the roasted veggies, then cover with the top half and serve.
