Baked chicken with spinach and feta

Background
This baked chicken with spinach and feta is a perfect midweek supper for the family - easy to make, healthy and delicious. Serve it with a mash or just simply with crusty bread.
Ingredients
- 8 chicken pieces (thighs & drumsticks)
- 3 Tbsp olive oil
- 2 tsp dried oregano
- Juice of 1 lemon
- 1 clove garlic, minced
- ½tsp caraway seeds
- 250g spinach
- 50g feta cheese
Instructions
- Preheat the oven to 200°C.
- Place the chicken on a baking tray and drizzle with 2 Tbsp oil and half of the lemon juice, then season with the oregano, salt and pepper. Bake for 35-40 minutes until golden brown.
- When the chicken is almost done, wash the spinach and drain. Cut the feta into small cubes.
- Heat the remaining oil in a frying pan and cook the garlic and caraway seeds for a few seconds, then added to the spinach and sauté for 2-3 minutes. Add the reaming lemon juice and the diced feta. Season with salt & pepper, mix gently.
- Serve the chicken on top of the spinach & feta mixture.
