Baked Cottage Cheese with Cinnamon Apples

This baked cottage cheese with cinnamon apples is a comforting, nourishing dish that works beautifully as a winter breakfast or a light dessert during the festive season. Warm spices, tender apples and creamy cottage cheese come together to create something that feels indulgent yet wholesome. The addition of chestnuts makes it especially festive, while walnuts add valuable nutrients such as magnesium and omega-3 fats, supporting bone and overall health.
It’s a wonderfully versatile recipe: use ground almonds for a higher-protein version, or rolled oats if you’re looking for a more gut-friendly, fibre-rich option. Serve it warm on cold mornings, or at room temperature as a simple dessert, finished with a drizzle of extra honey or syrup.
Ingredients
- 100g cottage cheese
- 1 medium egg
- 3 Tbsp honey, maple syrup or date syrup
- 1 tsp ground cinnamon
- ½ cup ground almonds or rolled oats
- ½ apple
- 1 handful chopped chestnuts or walnuts
Instructions
- Place the cottage cheese in a bowl. Add the egg, sweetener and half of the cinnamon, then mix until well combined.
- Stir in the ground almonds or oats, followed by the chopped chestnuts or walnuts.
- Transfer the mixture to a shallow, lightly greased oven-proof dish.
- Peel the apple, remove the core, then cut the flesh into small cubes.
- Scatter the apple pieces over the cottage cheese mixture and dust with the remaining cinnamon.
- Bake in a preheated oven at 180°C (or in an air fryer) for about 15 minutes, until set and lightly golden on top.
- Serve warm or at room temperature, drizzled with extra honey or syrup if desired.
