Baked fish with herbs & lemon crust

Background
This baked fish with herb & lemon crust is a very easy meal, ideal on busy days. Serve with chips, mash or just a salad.
Ingredients
- 1 Tbsp extra-virgin olive oil
- 2 skinned thick white fish fillets (such as hake, haddock or cod)
- 50g breadcrumbs (can be gluten-free)
- 1 garlic clove, crushed
- zest of Β½ lemon
- 1tbs chopped fresh tarragon
- 1tbs chopped fresh chives
- 1tbs chopped fresh parsley
Instructions
- Preheat the oven to 200C.
- Lightly grease a baking tray with oil.
- Season the fish and put, skinned-side down, in the tray.
- Mix the breadcrumbs with the herbs, add the garlic, oil and lemon zest.
- Cover the tops of each pieces of fish with breadcrumb mixture, pressing it down slightly.
- Put the tray in the oven and bake for 10-12 minutes or until the crust is golden and the fish is cooked through.
