Baked Sweet Potato with Stilton
Background
This baked sweet potato with Stilton is a healthy and indulgent side dish recipe, which has the perfect balance of sweet and savoury flavours. The creamy, tangy Stilton cheese melts over caramelized sweet potato wedges and roasted red onion, creating a dish that feels gourmet with minimal effort. It goes well with steak, roast chicken or game, but it’s equally satisfying on its own as a vegetarian main meal. Naturally gluten-free, high in protein, and rich in vitamin K2 for bone health, this recipe is both nourishing and full of flavour.
Ingredients
- 2 large sweet potatoes
- 1 red onion
- 1 clove garlic, minced
- 75g Stilton (or another blue cheese of your choice)
- Olive oil or spray
- Salt and pepper, to taste
Instructions
- Preheat the oven to 180°C (or prepare your air fryer).
- If the sweet potatoes aren’t organic, peel them. Cut each into 6–8 long wedges.
- Peel and cut the red onion into wedges.
- Place the sweet potatoes and onions on a baking tray (or in the air fryer basket). Drizzle or spray lightly with olive oil and season with salt and pepper.
- Bake or air fry for about 15 minutes, until the sweet potatoes are golden and tender.
- Scatter the minced garlic over the vegetables, then crumble the Stilton on top.
- Return to the oven (or air fryer) for another 3–5 minutes, just until the cheese has melted and starts to bubble.
- Serve warm.
