Baked wild salmon with samphire

Background
Tender and succulent samphire goes really well with seafood and you don’t need to spice it very much as it has a distinctive, nutty flavour. This baked Salmon with samphire is a perfect example - super easy to make, yet it tastes yummy. Ideal for laid-back dinner parties.
Ingredients
- 100g samphire
- 2 wild salmon fillet
- 1 Tbsp vermouth or 2 Tbsp white wine
- ½ lemon, sliced
- 1 tsp good quality balsamic vinegar
- Pinch of paprika or Cayenne
Instructions
- Preheat the oven to 180°C.
- Lay most of the lemon slices in a baking dish, then scatter the samphire over them. Drizzle with some oil.
- Put the salmon on top. Rub with oil, then pour over the vermouth or wine.
- Place two slices of lemon on top of the salmon, then dust them with paprika and season to taste.
- Cover the dish with foil, then bake in the middle of the oven for about 20-25 minutes. Don’t overcook the fish!
- Serve warm with side dishes of your choice.
