Balsamic broccoli and green peas soup

Background
This balsamic broccoli and green peas soup is ready in just 15 minutes. It’s healthy, vegan, gluten-free and low-carb too. Most importantly it’s really yummy and easy to make. It’s perfect for cleansing or in a health-conscious diet.
Ingredients
- 1 leek
- 1 Tbsp olive oil
- 2 cloves of garlic
- 1 head broccoli
- 2 cups green peas
- 500 ml vegetable stock
- 1 handful basil
- 1 Tbsp balsamic vinegar
- Balsamic glaze and basil leaves to serve
Instructions
- Slice the leek and roughly chop the broccoli
- Heat the oil in a large saucepan and gently sauté the leek for about 7 minutes,.
- Add the garlic and stir for a minute.
- Add the broccoli, then pour in the stock and bring to the boil.
- Gently simmer for 10-12 minutes, until tender, then add the peas and cook for another 5 minutes.
- Turn off the heat. Add the balsamic vinegar and basil leaves.
- Using a stick-blender, process the soup until you get a textured soup. Add more stock if it’s too thick.
- Serve with a few basil leaves and some balsamic glaze or vinegar drizzled on top.
