Background
This balsamic tomato and cucumber salad works well for parties, dinner parties, picnics or laid-back midweek suppers. Ideally you should use top quality balsamic vinegar and sweet, ripe tomatoes - but if you don’t have them to hand, then just add a little honey to the dressing!
Ingredients
- ½ cucumber
- 1 cup cherry tomatoes
- ½ red onion
- 1 handful basil leaves
- For the dressing:
- 2 Tbsp olive oil
- 1.5 Tbsp balsamic vinegar
- Honey to taste (if needed)
- Salt & pepper
Instructions
- Cut the tomatoes in half and put them in a serving bowl.
- Cut the cucumber in half lengthwise then scoop out the soft bits. Cut the cucumber into small chunks and add these to the tomatoes.
- Finely chop the onion and add to the salad.
- Whisk the dressing together and season with salt and pepper. Taste it and add some honey if it’s not sweet enough.
- Scatter the basil leaves on top before tossing it with the dressing.
