Balsamic tomatoes with beans

Background
The secret weapon of this balsamic tomatoes with beans is fresh, ripe tomatoes on the Vine. This dish is vegan, healthy, yummy and super easy to make. Serve it with pasta, gnocchi, toast, garlic bread or in flat bread.
Ingredients
- 1 Tbsp olive oil
- 1 red onion
- 2 cloves of garlic
- 1 celery stick
- 1 carrot
- 1 tsp Italian herb mixture
- 1 Tbsp Tomato purée
- About 9 cherry tomatoes on the Vine
- 2 Tbsp Balsamic vinegar
- 1 tin Cannoli beans
- Chopped fresh herbs to serve
Instructions
- Finely slice the onion, garlic and celery, then chop the carrot into small pieces.
- Heat the oil in a frying pan and gently sauté the chopped vegetables, except the garlic.
- When softened, add the herbs and garlic, then tomato purée. Stir for a few seconds to coat, then add the tomatoes, and balsamic vinegar. Season to taste.
- Stir for a minute, until the tomatoes slightly caramelise, then add half a glass of water.
- Put a lid on and sautée for 5-10 minutes, until you get a thick, silky sauce.
- Add the beans, warm through, then serve with fresh herbs scattered on top.
