BBQ elderflower and lemon drumsticks

Background
I had some homemade elderflower cordial to use up so I thought I could make a barbecue marinade from it. These BBQ Elderflower and lemon drumsticks and thighs were actually a great success! Serve them warm or cold with salads of your choice.
Ingredients
- 6-8 mixed chicken thighs and drumsticks
- 3 Tbsp elderflower cordial
- zest and juice of 1 lemon
- 1 clove of garlic, minced
- 1 tsp olive oil
- 1 handful of mint, chopped
- salt and pepper
Instructions
- Mix the cordial, lemon zest & juice, garlic, mint and oil in a large bowl. Add the chicken pieces and coat well. Marinate for 30 minutes, longer if time allows.
- Season the chicken with salt and pepper and remove from the marinade. Cook them on a BBQ, grill or in a griddle pan ( over medium heat) for 20-25 minutes, turning them and basting them frequently with the marinade.
- Serve warm or at room temperature.
