Background

I had some homemade elderflower cordial to use up so I thought I could make a barbecue marinade from it. These BBQ Elderflower and lemon drumsticks and thighs were actually a great success! Serve them warm or cold with salads of your choice.

Ingredients

6-8 mixed chicken thighs and drumsticks
3 Tbsp elderflower cordial
zest and juice of 1 lemon
1 clove of garlic, minced
1 tsp olive oil
1 handful of mint, chopped
salt and pepper

Instructions

Mix the cordial, lemon zest & juice, garlic, mint and oil in a large bowl. Add the chicken pieces and coat well. Marinate for 30 minutes, longer if time allows.
Season the chicken with salt and pepper and remove from the marinade. Cook them on a BBQ, grill or in a griddle pan ( over medium heat) for 20-25 minutes, turning them and basting them frequently with the marinade.
Serve warm or at room temperature.
