Beans with spinach

Background
This beans with spinach is a super easy and quick dish that can be served as a side dish with meat & fish or used as filling in flat-breads and wraps. Alternatively, serve it on a piece of toasted sour bread for a vegan/healthy lunch. You can add as much chilli as you like or omit it completely, depending on your preference.
Ingredients
- 150g baby spinach
- 1 tin cannellini beans
- 2 cloves of garlic
- 3 spring onions
- Juice of ½ lemon
- 1 pinch chilli flakes
- Salt and pepper
- 1 Tbsp olive oil
Instructions
- Blanch the spinach in boiling water for a minute, then drain. Squeeze the water out.
- Thinly slice the garlic and spring onion.
- Heat the oil in a frying pan. Add the garlic & spring onion pieces and gently fry them until light brown. Add a pinch of chilli (or more to your liking) and the spinach.
- Drain the beans and add to the spinach together with the lemon juice.
- Season with salt and pepper.
- Warm through, then turn off the heat and serve.
