Berry croissant bake
Background
When you have stale croissants, don’t throw them away! You can use them for lovely croffle sandwiches or French toasts for breakfast, or easy & yummy desserts like this berry croissant bake. I used ready-made Madagascar custard, but feel free to make your own custard for the recipe. As to the berries - blueberries, cherries and raspberries would work too.
Ingredients
- 1 large or 2 small stale croissant
- 1 handful blackberry
- 1 handful strawberry
- 2 Tbsp ground almond
- Grated zest of ½ lemon
- 1 cup ready-made custard (approx.)
Instructions
- Preheat the oven to 180°C.
- Cut the croissants into small chunks and scatter them into a small but quite deep baking dish.
- Arrange the berries between them, then scatter the ground almond and lemon zest on top.
- Pour over the custard, enough to cover the croissant pieces completely.
- Let it rest for 5-10 minutes, or until the oven reaches the required temperature.
- Bake for about 20 minutes, until golden.
- It can be served warm, at room temperature or cold.
