Blackberry jam oat bars

Background
These vegan blackberry jam oat bars are super easy to make. They have no extra sugar or oil, and can be gluten-free too, if appropriate oats are used. So they are quite healthy, particularly if made with homemade low-sugar blackberry jam.
Ingredients
- 3 ripe bananas
- 1 green apple, grated
- 1 cup oats (gluten-free, if needed)
- 1 tsp ground cinnamon
- 3 Tbsp blackberry jam
- 3 Tbsp ground almond
Instructions
- Preheat oven to 180°C . Grease and line a shallow, about 20x30 cm, baking dish with parchment paper
- Mash the bananas with a fork.
- Add the oats, ground almond, cinnamon and grated apple, then mix well.
- Let the mixture rest for a few minutes.
- Add the jam to the mixture and combine gently. If it’s too thick, add some apple juice.
- Transfer the mixture to the prepared dish, spreading it out evenly.
- Bake in the oven for approx. 20 minutes until golden.
- Let it cool, then cut it into bars.
