Background
You can make wonderful desserts with stale brioche. This blueberry and lemon brioche trifle is a good example. Itβs ready within 10 minutes, and tastes really yummy. You can cheat with this recipe by using lemon curd yoghurt, sold in most supermarkets. I used homemade lemon curd and homemade easy blueberry jam which made it even more delish.
Ingredients
- 4 small or 2 large brioche
- 4 Tbsp blueberry jam
- 50g blueberries
- 1 lemon, zested the juiced
- 2 Tbsp semi-dry Sherry
- 1 Tbsp lemon curd
- 1 tsp lemon juice
- 200 ml Greek yogurt or whipped cream
- Honey, sugar to taste
Instructions
- Cut the brioche into slices, then lightly toast them.
- Mix the yoghurt with the lemon curd, lemon zest, and a little lemon juice. Taste it. Add some honey or sugar to your liking. If youβre using whipped cream β whip it first lightly, until fluffy, then mix in the same ingredients.
- Line a deep glass bowl or dish with a layer of the biros and spread some jam over them. Then pour over half of the sherry. Scatter the blueberries on top, then spread half of the lemon cream over it.
- Repeat the layers of the toasted brioche, jam, sherry and lemon cream.
- Put the dish in the fridge for 2-4 hours (covered).
- Just before serving, garnish with lemon zest.
