Braised peas with bacon
Background
I love making this braised peas with bacon throughout the years as it can be served as a main or side dish. During the holiday seasons I serve it as a side dish with roast poultry (I add fresh mint & lemon zest at Easter) – during the Summer I serve it as a main dish with pasta or mashed potatoes (again, with some added fresh herbs). It’s really easy, ready in 15 minutes and super yummy!
Ingredients
- 2 Tbsp olive oil
- 250g smoked bacon
- 1 bunch of spring onions
- 1 clove of garlic (minced)
- 500g frozen green peas
- 1 head of little gem
- 200 ml chicken stock
- 30g butter or dairy-free spread
- 2 tbps fresh herbs of your choice (such as mint, parsley, basil etc), optional
Instructions
- Cut the bacon into small cubes, chop the onion and garlic. Shred the lettuce.
- Heat the oil in a saucepan and fry the bacon for 4 minutes until crispy. Add the garlic and onion, then gently sauté for 3 minutes.
- Add the peas and shredded lettuce leaves.
- Pour in the stock, bring to the boil, then simmer for 5 minutes.
- Stir in the butter and herbs (if used), then serve.
