Braised spiced red cabbage with plums

Background
This braised spiced red cabbage with plums goes particularly well with roasted duck and goose, but you can serve it with other poultry, games or pork too. Itβs perfect for Thanksgiving, Christmas or other festive meals during the winter months.
Ingredients
- 1 red cabbage
- 2 shallots, chopped
- 2 cm piece ginger
- 1 star anise
- 1 cinnamon stick
- Β½ cup rice vinegar
- Β½ cup rice wine like SHAOXING
- 2 Tbsp red wine vinegar
- 1 Tbsp hoisin sauce
- 1 Tbsp soy sauce
- 1 Tbsp muscovado sugar (to taste)
- 2 Tbsp honey
- 1 tsp toasted sesame oil
- 6 plums
- Salt and freshly ground peppercorn
- 2 Tbsp sesame seeds
- 6 plums
Instructions
- Thinly slice or shred the cabbage.
- Peel the ginger. Put them in a heavy based saucepan, together with all other ingredients, except the plums and sesame seeds. Season with salt and pepper.
- Cut the plums in half, reserve four halves, add the others to the cabbage.
- Put the lid on, then slowly simmer over medium heat for about 30 minutes, or until the cabbage is tender.
- Stir the cabbage, then add the remaining plums and cook for 5 minutes until the plums are tender. Taste and adjust the seasoning or sweetness to your liking.
- Scatter the sesame seeds on top and serve.
