Broccoli and green pea soup

Background
This broccoli and green pea soup is zingy and refreshing - perfect on cool Spring and Summer days. Furthermore, it’s vegan, gluten-free and low carb so it’s ideal for various diets. It’s ready within 15 minutes!
Ingredients
- 2 shallots
- 2 garlic cloves
- 1 carrot
- 1 small head of broccoli
- 750 ml vegetable stock
- 2 cups frozen green peas
- 1 small handful of mint leaves
- 1 small handful pea shoots ( optional)
- Pea shoots to garnish
- Lemon juice to serve
Instructions
- Finely chop the shallots and garlic. Heat 1 Tbsp of olive oil in a saucepan and gently fry them for 3—4 minutes.
- Meanwhile, dice the carrot then add to the onion.
- Pour over the stock and bring to the boil. Cook for 5 minutes, then add the green peas and cook for another 5 minutes.
- Turn off the heat, add mint leaves and pea shoots, then blitz with a hand-held blender until you get a silky soup.
- Add the lemon juice and serve, garnished with some pea shoots.
