Broccoli, Leek and Celeriac Soup

Background
This soup is recommended for 5:2 and low-cal diets followers, as it's satisfying and tasty, yet wonderfully low in calories! As made here, using a pressure cooker, this Broccoli Leek and Celeriac Soup works out at only about 65 kCal per portion.
Ingredients
- 10 squirts oil spray (10 kCal)
- 2 cloves Garlic (9 kCal)
- 250g Leeks (55 kCal)
- 320g Broccoli (106 kCal)
- 220g Carrots (66 kCal)
- 800g Celeriac (143 kCal)
- 1 litre Vegetable Stock (40 kCal)
- Seasoning to taste
- Garnish: Fresh herbs of your choice
Instructions
- Finely chop the garlic. Clean, trim and roughly chop the leeks, broccoli & carrots. Peel the celeriac and roughly chop.
- Heat the oil in the cooker over a medium heat then add the garlic. Stir to soften then lower the heat, add the leeks and sauté for a couple of minutes.
- Put in the remaining vegetables and allow to sweat for 5 minutes, stirring occasionally.
- Add the stock, bring to the boil then cook under pressure for 8-10 minutes. Cool under running water.
- Use a hand held blender to mix to a smooth consistency. Simmer and stir in the open pan for another 5 minutes adding a little more stock if you prefer a thinner soup.
- Scatter some fresh herbs over each portion.
Tips
If you don't have a pressure cooker you can use a heavy-based pan and simmer for about 30-35 minutes stirring regularly, adding more stock if required.© 2026 Copyright CookTogether
