Cherry and almond traybake
Background
Cherries are one of our national fruits - in the Summer they grow in Hungary in abundance. Most people with a garden have a cherry tree which produces plenty of fruits for the whole family and friends. We make compote, jam and cordial for the winter, the slightly damaged ones are used to make palinka. During the cherry season we also make cakes, pies and dessert with fresh, ripe cherries. This dairy-free Cherry and almond traybake is a family favourite - super easy to prepare - ideal for summer garden tea-parties, picnics, trips and so on.
Ingredients
- 100g soft butter or dairy-free margarine
- 150g sugar
- 1 tsp vanilla essence
- 2 eggs
- 250ml almond milk
- 175g flour
- 75g ground almond
- 1 tsp baking powder
- 2 pinch salt
- 250g of stoned cherries
- ½ tsp cinnamon
Instructions
- Stone the cherries and put them on a paper towel to soak up the excess moisture. Meanwhile, preheat the oven to 190 ° C.
- Beat the butter with sugar, then mix in the eggs. When it is light and fluffy, add the almond milk, flour, ground almond, salt, baking powder and cinnamon. Combine gently until you get a creamy batter.
- Pour the batter into a baking tray lined with parchment paper and scatter the cherries on top evenly. Push them into the batter slightly.
- Bake in the middle of the oven for approx. 30 minutes, until golden brown. Test it with a skewer by inserting it in the centre - if it comes out clean, the cake is done, if not, bake a bit longer.
- Let the cake cool in the tray for 5-10 minutes, then transfer it to a wire rack.
- Let it cool completely, before slicing it into squares. Dust the squares with icing sugar just before serving.
