Background
Homemade panettone is one of the best ways to welcome the Advent season. Soft, lightly sweet and beautifully aromatic, this Italian Christmas bread fills your home with festive warmth long before it reaches the table. When you make it yourself - especially in a breadmaker—it becomes surprisingly simple, fully customizable and far tastier than most shop-bought versions.
This chestnut and cranberry panettone is a wonderful dairy-free alternative to the traditional loaf, which can be hard to find in stores. Sweet dried cranberries, candied orange peel and roasted chestnuts give it a gorgeous festive flavour perfect for breakfast, afternoon tea, or as a gift to friends and family.
Ingredients
- Initial Ingredients
- 1½ tsp yeast
- 400g strong white flour
- 4½ Tbsp soft brown sugar
- 1 tsp salt
- 50g sunflower spread, scooped into small 2 cm pieces
- 2 medium eggs, beaten
- 200 ml warm almond milk
- Additional Ingredients (added later in the cycle)
- 70g sunflower spread, scooped into small 2 cm pieces
- 1 medium egg, beaten
- 50g dried cranberries
- 50g candied orange peel
- 50g chopped roasted chestnuts
Instructions
- Add the Initial Ingredients to your breadmaker pan in the order listed above, unless your machine’s manual recommends a different sequence.
- Choose the brioche setting if your breadmaker includes one.
- If it does, the machine will usually beep to indicate when to add the additional ingredients.
- If your machine does not have a brioche cycle, select the basic bread setting instead.
- Add the Additional Ingredients approximately 60 minutes after starting (about 10 minutes before the end of the first kneading cycle) if using a basic setting.
- Once the cycle is complete, allow the panettone to cool slightly inside the pan.
- Carefully transfer it to a wire rack and let it cool completely before slicing and serving.
