Chicken, Chorizo & Beans

Background
In this Spanish-style Chicken, Chorizo & Beans one-pot recipe I'm using butter beans, but almost any type works well. The wonderful spiciness of Chorizo gives great colour and flavour to the dish. Perfect midweek family meal!
Ingredients
- 4 chicken legs (or 8 thighs and/or drumsticks)
- 1 teaspoon smoked paprika
- 1 Tbsp olive oil
- 100g chopped chorizo sausage (preferably raw)
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 bunch parsley, chopped
- 400g can tomatoes
- 400g can butter beans
- 1 sprig thyme
- 1 bay leaf
- salt and pepper
Instructions
- Coat the chicken all over with the smoked paprika and seasoning. In a heavy-bottomed pan, heat the oil and brown all sides.
- Remove the chicken and add the chorizo to the pan.
- Let the oil come out of the sausage, then add the onion and cook gently until it softens.
- Add the garlic and ½ of the parsley.
- Cook for 10 minutes covered on a low heat.
- Stir in the tomatoes and beans. Add the thyme and bayleaf then put back the chicken and bring to a simmer. Cover and leave for half an hour on a minimal heat.
- Uncover and reduce the sauce until it's nice and gooey - about 10 minutes.
- Serve sprinkled with the remaining parsley.
