Chili con carne with green beans

Background
Chili con carne is normally made with kidney or black beans. This chili con carne with green beans has many veggies, so it’s a healthy version. It can be quite spicy , depending on the strength of the chipotle paste - if it’s extra hot, then you won’t need cayenne in the recipe. Serve it with rice or flat bread and crispy salad, salsa on the side. You also use this mixture to stuff veggies - such as potato skins, squash, red pepper etc.
Ingredients
- 450g steak mince
- 1 onion
- 2 garlic cloves
- 2 carrots
- ½ red bell pepper
- 2 tsp chipotle paste
- 1 tsp cumin
- 1 tsp ground coriander
- 1 tsp dried oregano
- 1 tsp smoked paprika (or half cayenne for extra heat)
- 10 small tomatoes on the vine
- 1 Knorr smoked chilli & tomato stock pot
- 1 bay leaf
- 1 tin black beans
- 150g Green beans
- Coriander leaves
- 1 Lime, juiced
- 4 spring onions, sliced
Instructions
- Finely chop the onion, garlic, carrot and red pepper.
- Heat 2 Tbsp olive oil in a large, heavy-based saucepan and cook the onion for 5 minutes.
- Add the mince and garlic, keep stirring until the meat changes colour.
- Add the spices, stir, then add the chipotle paste and tomatoes. Sir for another minutes or so.
- Add the chopped vegetables and enough water to cover well. Add the bay leaf and stock pot.
- Season with salt and pepper then bring to the boil.
- Turn down the heat and gently simmer for 25 minutes, or until you get a thick sauce.
- Drain the beans and stir into the sauce. Add the chopped coriander and a squeeze of lime juice.
- Serve warm, garnished with coriander leaves and spring onion slices.
- You can add some Jalapeno slices (for extra heat) and a dollop of soured cream, if liked.
- Serve warm.
