Background

This chilli mayonnaise is very easy to make and much more tasty than the shop-bought versions. It's a brilliant dip for nibbles or seafood. Make sure you use a fresh, good-quality egg as it is raw!

Ingredients

1 egg yolk
1 red chilli (seeded)
50 ml white wine vinegar
1 tsp dijon mustard
250 ml olive oil

Instructions

Finely chop the chilli flesh.
Mix the yolk with the chilli, mustard and vinegar.
Add slowly and gradually add the oil, and using a whisk or hand-held blender, process until the mayonnaise is pale, smooth and foamy.
Season to taste.
Serve it as dip or pour it over barbecued fish or seafood.
