Background
This chilli mayonnaise is very easy to make and much more tasty than the shop-bought versions. It's a brilliant dip for nibbles or seafood. Make sure you use a fresh, good-quality egg as it is raw!
Ingredients
- 1 egg yolk
- 1 red chilli (seeded)
- 50 ml white wine vinegar
- 1 tsp dijon mustard
- 250 ml olive oil
Instructions
- Finely chop the chilli flesh.
- Mix the yolk with the chilli, mustard and vinegar.
- Add slowly and gradually add the oil, and using a whisk or hand-held blender, process until the mayonnaise is pale, smooth and foamy.
- Season to taste.
- Serve it as dip or pour it over barbecued fish or seafood.
